Ah, the sweetness of maple, freshly produced—is there anything nicer? Matthew and Bonnie Harrison don’t think so. They operate Hidden Mountain Maple Farms, nestled away just outside of the historic town of Springhill, Nova Scotia. Visitors to Saltscapes Expo in 2017 may have met Matthew and helpers during their one day exhibit via Select Nova Scotia; what they learned there impressed them so much they came back as full time exhibitors in 2018!
In late winter, the magic begins, as the Harrisons and their helpers start running taps and buckets and lines to their 13,000 sugar maple trees. Once the sap is collected, its transported to their production area, where the watery, sweet sap is boiled to produce the golden, rich and delicious maple syrup we all enjoy on everything from pancakes to pork roasts.
Hidden Mountain doesn’t just produce maple syrup—look for their maple cream and butter, and such decadent delights as maple fudge, granulated maple sugar—delicious in coffee or baking!—and a variety of other sweet treats, including the old fashioned and delicious maple cones.
